Parker (27-2) has bounced back after a pair of loss to Brits Anthony Joshua and Dillian Whyte, knocking out Shawndell Winters last February in Texas on the Garcia-Vargas undercard.
The 28-year-old, who is ranked the seventh-best heavyweight in the world by The Ring magazine, will be looking to put himself back into title contention when he takes on long-time rival Junior Fa.
Fa (19-0) enters as the WBO Oriental interim heavyweight title, having last defeated Devin Vargas by unanimous decision in 2019.
"This is going to be war,” said Eddie Hearn during the fight announcement.
“We’re looking forward to co-promoting our first event in New Zealand with David Higgins and Duco.
"There’s plenty of needle with the amateur rivalry and there’s national pride at stake. A win over Fa will catapult Joe back into World Title contention.”

Joseph Parker will take on Junior Fa on Saturday, February 27, 2021 at the Spark Arena in Auckland, New Zealand.
The coverage for the highly anticipated fight is set to start at 5:30 pm (AEDT).
With the card stacked with talent, it is expected that the main event should be fighting at around 9 pm.
The fight will be broadcast live and exclusive on Main Event pay per view.

Whilst they are yet to fight at the professional level, Parker and Fa have had plenty of bouts at the amateur level, with the pair splitting their four bouts.
Their first encounter was at the 2009 Boxing New Zealand National Championships held in Rotorua, with Fa winning on points in the super-heavyweight final.

Fa would get his revenge in 2012, eliminating Parker from the Olympic qualifying tournament in the semi-finals.
